The plate carrier will protect you but I believe it is vulnerable to shots from the side. If you get shot from the side under your armpit expect your lungs to explode before you fade to black. I have seen people shot with an AK, plate carrier was ruined but they survived. If in doubt about any dayz science check out a utuber called WOBO.

The DayZ wiki seems to suggest that the smaller caliber rounds (.22 and 9mm, I assume) take extra shots to kill if you are wearing the Plate Carrier.
